  • King Blue Oyster

    A meaty mushroom with the beautiful blue of the Blue Oyster and a thick, tender stem. An excellent meat replacement for vegetarians that also pairs well with beef, lamb, pork and venison. Shares the extended shelf-life of the King Oyster.

  • Lion's Mane

    A mild, slightly sweet mushroom that provides a similar culinary experience to lobster, crab or scallops. Lion’s Mane can also be pulled into shreds and prepared similarly to pulled pork. Very good at absorbing sauces.

  • Blue Oyster

    A beautiful variety with a mild, savory taste, Blue Oyster mushrooms can be braised, sautéed, roasted, fried, grilled, sir-fried or tossed into soup to add umami to the broth.

    A medicinal mushroom said to be able to treat infections, aid in the fight against cancer and pulmonary diseases, and more.

  • White Elm Oyster

    A firm oyster mushroom with a delicate, nutty flavor.

  • King Oyster

    A meaty mushroom with a thick stem, rich umami flavor, and an excellent shelf-life.

New varieties of gourmet mushrooms will be grown from time to time. Please submit any specific types of mushrooms you’re interested in; they will be considered if there is sufficient interest when production space is available.
